In a large bowl, pour the Easy Bake pancakes mixture and the water and stir until you get a uniform porridge. Let it rest for 15 minutes.

Add the lemon zest and the blueberries to the mixture. Stir gently.

Put a little butter in a non-stick pan and when it heats up enough add a ladle from the porridge. Bake until blisters form on the surface and turn on the other side. We repeat the same process with all the porridge.

Serve with extra fruit and honey.
